Evaluation of the Biochemical and Functional Characteristic of Stinging catfish, Heteropneustes fossilis Muscle Tissue with Emphasize on Myofibrillar Protein and Collagen

Objectives: To evaluate the physico-chemical and functional characteristics of stinging catfish muscle tissue during storage time 18 hours following death fish. Methods: In present study, were collected from paddy fields streams near Tiruvalla Kerala. Fish slaughtered immediately analyzed for changes in pH value, cook loss, expressible water content, holding capacity, sensory demerit score values, textural profile compared with progress rigor mortis. Study also evaluated protein fractions correlated them autolytic enzyme activities. Findings: catfish, mortis occurred within four (78.37 %) at ambient temperature. The post stage was attained after 6th hour K value reached above 60% 8th which indicates unacceptable range consumption. study proved that is an inosine producer. initial concentration sarcoplasmic fish (13.71%) decreased to 7.62% end storage. myofibrillar showed a decrease 44.87% final 18.02%. Protein denaturation evident increase 39.65% 73.20% period. Collagen found be reduced (31.85% reduction) 18th Pepsin soluble collagen less susceptible activity collagenase pre-rigor stage, confirming its role post-rigor softening when acid insoluble collagen. Novelty: work authenticated typically due degradation pepsin not reported elsewhere. Additionally, proteins have more influence on total hardness stiffness than collagen, while cohesiveness better function protein.
